Bread baking is one of my favorite pastimes.  I love the feeling of accomplishment I get when I enter the kitchen and bake bread.  Recently I was in Chicago teaching at a Chef Brad Event and created this new recipe.  I adore the texture and flavor of the  red rice and chia.  It makes the perfect toast and the texture is perfect.  With my WonderMix I can create the best breads ever in moments.  From start to finish I can have perfect breads in just over one hour.

Red Rice Chia Bread

Ingredients
  • 5 cups hot water
  • 2/3 cups oil
  • 2/3 cups agave
  • 2 cups cooked *red rice
  • 1/2 cup chia seed
  • 1 tablespoon salt
  • 3 tablespoons yeast,  Saf Instant
  • 4 cups fresh ground spelt flour
  • 10 plus cups clean white flour (Wheat Montana’s Natural White or King Arthurs All Purpose)
Instructions
  1. In your WonderMix place oil, water, agave, rice, chia ,salt, and spelt flour in bowl.    Place yeast on top of flour and turn on mixer.
  2. Add white flour until dough pulls away from the sides of the bowl.  Knead for 6 minutes.
  3. Remove from bowl and divide into loaves.  Place in pans and let rise until double.
  4. Bake in a preheated 400 degree oven at 350 degrees until bread is done.

Bread making should be fun and enjoyable.   If you are stressing in the kitchen making bread you are doing something wrong.  Perhaps it is your machine.  Perhaps it is the quality of ingredients you are using.  Perhaps you are just fearful of failure.   I have proven time and time again over the years that anyone, anyone, can make bread with the proper machine and quality ingredients.

Ingredients
  • 1 quart Almond milk or milk
  • ¼ cup amaranth flour (milled in the WonderMill)
  • ½ cup coconut sugar (Better Body brand)
  • 6 ounces dark chocolate or bitter sweet chocolate finely chopped
Instructions
  1. In a bowl, whisk together amaranth flour and sugar.
  2. In a small sauce pan add milk. Whisk the amaranth flour and sugar into cold milk.
  3. Bring up heat whisking constantly until thick and hot.
  4. Add chocolate and whisk until it is smooth.
  5. Pour into cups and enjoy with a fresh baked cookie.

Ingredients
  • 2 cups warm milk
  • 1 cup sourdough starter
  • 1/4 cup oil or butter
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 teaspoons salt
  • 3 cups whole wheat or spelt flour, fresh ground
  • 1/4 cup teff or fresh ground pop corn, don’t grind the teff, but if using popcorn grind in your Wondermill
  • 2 tablespoons Saf instant yeast
  • Natural white flour
Instructions
  1. Add ingredients in the order given to your WonderMix Turn on mixer and add white flour until dough pulls away from the sides of the bowl. Mix for 6 minutes.
  2. Remove and divide into 12 pieces or 24 if doing sliders. Roll into balls using your cupped hand. Flatten into burger size circles, place on parchment paper, 6 to a pan, leaving plenty of room for them to grow.
  3. Brush with egg white and sprinkle with sesame seeds. Let rise to double and then bake in a 400 degree oven for 5 minutes and then drop temperature to 325 degrees and cook for another 6 to 10 minutes.

Options:

  • Bacon and feta cheese
  • Golden raisins and dill
  • Smoked Spanish Paprika and kalamata olives

The options can be added in the beginning of the process in your bowl, with the exception of Feta cheese. Always add the Feta in the last minute of kneading to retain shape and texture .
Sometimes I use all natural white Flour and no spelt flour and just add the teff. It depends on the mood I am in. Bread does not always have to be healthy as long as we are using chemical free quality products. You can also do this recipe with whole wheat if you desire.

Gluten-Free Pizza Dough

Ingredients
  • 1.5 cups warm water
  • 1/2 cup potato starch
  • 5 eggs
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 1/4 cup olive oil
  • 2 teaspoons Zantham Gum
  • 1 tablespoon instant yeast
  • 4 cups fresh ground gluten free flour, a blend of three or more works well.
  • (Brown rice, quinoa, amaranth, Sorghum, teff, or buckwheat) Ground in your Wondermill on the Pastry setting.
  • Reserve 1/2 cup flour for making the pizza’s
Instructions
  1. Place ingredients in WonderMix Mixer Bowl and mix well. This dough should be more like a heavy cake batter. Not like a bread dough. Mix well for 2 minutes with cookie whips, not dough hook.
  2. On flour covered parchment paper, scoop desired amount of dough and sprinkle with flour and pat down into as circle. This can be baked ahead of time, or you can top and bake like a pizza.

Smoked Meat Loaf

Serves: 3 loaves
Ingredients
  • 4 lbs ground beef, lean
  • 6 cups cooked brown rice (or red cargo rice, found in oriental markets)
  • 1 large onion
  • 2 bells peppers
  • 6 eggs
  • 1 bunch fresh parsley
  • 3 garlic cloves
  • 3 tablespoons Italian Seasoning
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon each salt and pepper
  • 1 sleeve crackers, crushed
Instructions
  1. In WonderMix blender place eggs, onion, bell peppers, garlic, parsley, oil, and vinegar. Pulse until well chopped.
  2. In mixer bowl place meat, rice, Italian seasoning, crackers, and salt and pepper.
  3. Pour blender mixture over meat and mix with dough hook until well blended.
  4. In large disposable pan that is sprayed, form three loaves. Top with tomato sauce or ketchup.
  5. Smoke in Smoker for 4 hours.
  6. I always crank up the heat for the last 30 minutes to caramelize the ketchup.
  7. Let rest before slicing.

My favorite smoker it my Traeger smoker and the WonderMix kitchen mixer makes this an easy job.

How To BUILD Your Sourdough Starter

How To BUILD Your Sourdough Starter

Chef Brad’s Sourdough Starter works well for traditional sourdough as well. There is a process called a build that you do to build it’s strength over a few days to use it as your yeast. It is well worth the effort and this starter is powerful.

Mature Sourdough Culture

Day one

  • Initial Chef Brad’s Sourdough Mix           200 gm.
  • Organic Rye Flour                                          90 gm.
  • Natural White Flour                                        90 gm.
  • Water  90 degrees f.                                     225 gm.

Mix well and cover, leave in a warm place for 24 hours.  In a warm area.

Day two, three, four, and five.

  • *“Chef”                                                             200 gm.
  • Natural White Flour                                      180 gm.
  • Water                                                              225 gm.

*The “Chef” is what you make on the first day.  On day two, three, four, and five you will take 200 grams of it and add flour and water.  Discard the remaining.

This becomes your new starter.  Save the original one for future use.  The end one becomes your starter.  You can use it for a few days, but if you let it set you will need to go through the process again.  The process is what activates the natural yeast for baking the doughs.  If your bread is not responding just do another feed.

Quick process:

You can add kefir to the starter to give it strength and to use it quicker.
