Goulash

Some recipes bring up memories and remind us of childhood. This is a favorite childhood recipe of mine. It was I thought a “mom” original, but I later found out that it was a grandmother original. Some of the best recipes are the ones handed down from parent to child. I have modified this recipe to work in the pressure cooker.

Goulash

Ingredients
  • 1/2 lb. lean ground beef or ground turkey
  • 3/4 cup uncooked red quinoa
  • 1 finely chopped green bell pepper
  • 1 finely chopped small yellow onion
  • 3 minced garlic cloves
  • 1 28 oz. can crushed tomatoes
  • 2 cups water
  • 3 tablespoons olive oil
  • 1 small can chopped olives, try kalamata for a change
  • 1 lb. flat egg or ribbon noodles, uncooked, or gluten free noodles
  • 2 cups cheddar cheese, grated
  • Salt and Pepper
Instructions
  1. In your pressure cooker brown the meat with the red quinoa and olive oil.
  2. Add all ingredients except the cheese and mix well.
  3. Place lid on pressure cooker and cook on high pressure for 6 minutes.
  4. Let pressure down naturally, open and stir and cover with cheese.
  5. Place lid on pressure cooker and let cheese melt.
  6. Serve with fresh baked french bread.

Ingredients
  • 1 quart almond milk
  • 1 cup sugar
  • 1 quart rice dream
  • 1 soft tofu – 12 oz. package
  • 1/2 gallon Cherries with juice (6 cups) or 1 quart fresh Strawberries pureed
  • 1 tablespoon Watkins vanilla
  • 1 tablespoon Frontier Strawberry extract
  • 2 teaspoon Lecithin powder (makes it more creamy)
  • 1/2 cup Ultra Gel
Instructions
  1. Blend Tofu with Rice Dream.
  2. Add with rest of ingredients to White Mountain Ice Cream Freezer.
  3. Freeze according to manufacturers instructions.

*** Note from Chef Brad: The White Mountain Ice Cream Freezer is the best ice cream freezer because it actually freezes your ice cream! According to Chef Brad, there is no other ice cream freezer.

Ingredients
  • 3 fresh apples
  • 1 container goat cheese crumbles
  • ½ cup golden raisins
  • ½ cup chopped almonds
  • 3 cups chicken breast, cooked, diced
  • 2 cups cooked red quinoa
Instructions
  1. Wash and dice apples (no need to peel or seed them).
  2. Place in a large bowl and add in the rest of the ingredients BUT the goat cheese.
  3. Toss with the dressing and then finish with the crumbled cheese.
Dressing

Ingredients
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • ½ cup jam of choice (ex: raspberry, fig, etc.)
  • 1 Tablespoon Xagave
  • 1 onion, diced, caramelized
Instructions
  1. In a sauté pan caramelize onion.
  2. Combine all of the ingredients.
  3. To Caramelize an onion, slice really thin and in a sauté pan add 2 to3 tablespoons of oil and 2 tablespoons of sugar.
  4. Cook sugar in oil until it starts to brown and then add sliced onion and sauté until translucent.

Ingredients
  • 1 cup rice
  • 1 cup white quinoa
  • 1 cup pasta, small
  • 1 28 oz. can chopped tomatoes
  • 1 bunch chopped parsley
  • 1/2 chopped onion
  • 2 tablespoons smoked paprika
  • 4 cups chicken stock
  • 1/4 cup oil
  • 2 tablespoons sugar
Instructions
  1. In large pressure cooker add oil and sugar.
  2. Heat until sugar is brown and bubbly.
  3. Add quinoa and rise.
  4. Toast until golden brown.
  5. Add add remaining ingredients and place lid on cooker.
  6. Cook for 6 minutes and let pressure release naturally.

Ingredients
  • 2 cups cooked barley
  • 6 eggs
  • 1/4 cup olive oil, plus 2 tablespoons
  • 2 bunches steamed asparagus, cut in 14 inch pieces
  • 3 cups ricotta cheese
  • 1 onion chopped
  • 2 garlic cloves,chopped
  • 1 cup golden raisins
  • 1/2 cup pine nuts
  • 2 tablespoons chopped fresh parsley
  • 1/2 to 3/4 cup fresh grated Parmesan cheese
  • Salt and pepper
Instructions
  1. In saute pan, saute onion and garlic in 2 tablespoons olive oil.
  2. In large bowl add ricotta and eggs, mix well and add all ingredients and mix again.
  3. Pour into large casserole pan, sprayed with non stick spray.
  4. You can coat with bread crumbs to add a crispy coat if desired.
  5. Bake in a 375 degree oven for about 20 minutes or until a golden brown.

Ingredients
  • 2 cup wonder flour or fresh ground spelt flour
  • 1 cup powdered sugar
  • 1 1/2 cups Xagave
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • pinch of cinnamon
  • 6 eggs
  • 1 cup buttermilk
  • 1/4 cup baking cocoa powder
  • 1 teaspoon baking powder
Instructions
  1. Step one, cream following ingredients together: 1/2 cup wonder flour or fresh ground spelt flour, 1/2 cup powdered sugar, 1/2 cups Xagave, 1 teaspoon salt, 2 teaspoons baking soda, 2 teaspoons vanilla extract, pinch of cinnamon.
  2. Step two, add: eggs one at a time
  3. Step three, whisk in: 1 cup buttermilk.
  4. Step four, whisk together following ingredients and add to step one, two, and three. 1 1/2 cups WonderFlour or fresh ground spelt flour, 1/2 cup powdered sugar, 1/4 cup baking cocoa powder, 1 teaspoon baking powder.
  5. Beat till smooth.
  6. Fill cupcake liners 3/4 full and bake in a 350 degree oven for about 16 minutes. This recipe can be used for layer cakes or sheet cakes.
  7. Top with butter cream frosting.

  • 1 pound soft butter
  • 8 ounces cream cheese
  • 1/2 cup baking cocoa powder
  • 1/4 cup heavy cream
  • powdered sugar

  1. Cream first 4 ingredients, then add powdered sugar till you like consistency.
