Wonderful Fudge (Pantry Members)

Ingredients
  • 18 oz. Chocolate chips (milk or semi-sweet)
  • 1 pint (16 oz.) marshmallow cream
  • 2 cups nuts
  • 1 cup shredded sweetened coconut (optional)
  • 2 teaspoons vanilla
  • 1/2 pound butter (2 cubes)
  • 4 1/2 cups sugar
  • 1 can evaporated canned milk
Instructions
  1. Place the chocolate chips, marshmallow cream, nuts, coconut and vanilla in WonderMix Mixer bowl with whips.
  2. Place the butter, sugar and canned milk in a tall heavy-duty pan.
  3. Bring to boil stirring until it comes to a complete boil on medium heat. Boil without stirring for 9 minutes. After 9 minutes pour on top of the ingredients in your Bosch bowl. Whip for a few minutes. Pour on a lightly buttered cookie sheet. Allow to cool. Cut into squares and eat.
  4. For a wonderful change, omit the coconut and add 2 teaspoons orange oil.
  5. (One of the secrets of making candy is to use a heavy-duty pan with a thick bottom. This usually keeps the candy from burning)

Ingredients
  • 1 tablespoon yeast
  • 1/4 cup warm water
  • 1 tablespoon sugar
  • 1 and one half cubes of butter, chilled
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1/4 cup sugar
  • 1 cup room temperature buttermilk
  • 3/4 cup Chef Brad’s Cranberry Sauce
  • 5 cups sifted whole grain flour, spelt works really well.
  • 1 cup white flour
Instructions
  1. In separate dish mix yeast, water, and sugar.
  2. Let rest for 5 to 10 minutes.
  3. In WonderMix mixer with whips add, flour, baking soda and powder, salt, sugar, and chopped chilled butter.
  4. Turn on mixer and cut the butter into the flour. Do not over mix.
  5. You want the butter to be pea size.
  6. Take off whips and put on dough hook.
  7. Add yeast mixture, cranberry sauce, and half the butter milk.
  8. Turn on and mix adding more buttermilk if needed. You want a really moist and sticky dough. Once again do not over mix.
  9. Place lid on mixer and let rise.
  10. Later remove from mixer on floured surface and gently knead.
  11. Roll out dough and cut with biscuit cutter.
  12. Place close together on baking pan and bake in a hot 400 degree oven for 12 to 15 minutes or until biscuits are golden brown.

Holiday Orange Rolls

Ingredients
  • 4 cups hot milk
  • 3/4 container orange juice concentrate, reserve remaining for topping
  • 1 large yam, cooked and peeled, I use the pressure cooker
  • 2 teaspoons orange oil
  • 4 eggs
  • 1/3 cup agave or sugar
  • 1/2 cup melted butter plus 1 cube for baking pan
  • 1 tablespoon salt
  • 12 plus cups of natural white flour
  • 3 tablespoons yeast
Instructions
  1. Place milk, 1/2 cup butter, eggs, sugar, and orange oil with yam in blender. Blend well.
  2. Add to WonderMix mixer bowl and add salt and 8 cups of flour.
  3. Place yeast on top of flour and turn on mixer.
  4. Mix adding flour until dough pulls away from the sides of the bowl.
  5. Knead for 4 to 6 minutes.
  6. Form into rolls and place in baking dish that has melted butter on bottom or dip rolls in melted butter.
  7. Place on baking dish and let rise until double.
  8. Bake in a 350 degree oven for 20 to 25 minutes or until done.
  9. Remove from heat and let cool.
  10. Top with orange glaze (recipe below).
Orange Glaze

Ingredients
  • 1/4 container orange juice concentrate
  • 1/4 cup milk or cream
  • 2 tablespoons melted coconut oil
  • Powdered sugar
Instructions
  1. Place juice, cream, and coconut oil in dish.
  2. Whisk.
  3. Add powdered sugar until desired consistency is reached.
  4. Drizzle over rolls.

Whole Wheat Hamburger Buns

Ingredients
  • 4 cups warm milk
  • ½ cup oil
  • 4 tablespoons brown sugar
  • 4 eggs
  • 2 teaspoons salt
  • 6 cups whole wheat flour, fresh ground
  • 4 tablespoons Saf instant yeast
  • White flour or bread flour, various amounts
Instructions
  1. Add ingredients in the order given to your WonderMix mixer. Turn on mixer and add white flour until dough pulls away from the sides of the bowl. Mix for 6 minutes.
  2. Remove and divide into 24 pieces. Roll into balls using your cupped hand. Flatten into burger size circles, place on parchment paper, 6 to a pan, leaving plenty of room for them to grow.
  3. Brush with egg white and sprinkle with sesame seeds. Let rise to double and then bake in a 400 degree oven for 5 minutes and then drop temperature to 325 degrees and cook for an additional 13 to 15 minutes or until golden brown.

Ingredients
  • ¼ cup fresh ground black bean flour
  • 1 cup hot water
  • ½ cup sour dough starter * can be purchased at www.chefbrad.com
  • ½ cup cooked black quinoa
  • 4 tablespoons olive oil
  • 4 tablespoons Xagave
  • 2 teaspoons salt
  • 1 tablespoon yeast
  • 2 to 3 cups bromain free bread flour
Instructions
  1. Place all ingredients in WonderMix mixer only adding half the flour and placing the yeast on top of the flour.
  2. Start mixer and add more flour until dough pulls away from the sides of the bowl.
  3. Knead for 6 minutes and remove from mixer and form free standing loaf.
  4. Let rise on parchment lined baking pan.
  5. Bake in a hot 400 degree preheated oven dropped to 350 degrees until done, about 20 to 25 minutes.

If you don’t have a steam oven, bake on a preheated pizza stone until the internal temperature reaches 180 degrees inside.

Serves: 2 large loaves
Ingredients
  • 2 cups boiling water
  • ½ cup half and half
  • 2 tablespoons unsalted butter
  • ½ tablespoon salt
  • ½ cup sugar
  • ½ cup dried cherries
  • 1 tablespoon cardamom seeds
  • 3 cups whole grain flour
  • 3 cups white flour
  • 1 tablespoon yeast
Instructions
  1. In a WonderMix mixer, combine all of the ingredients in the order listed. Mix until combined, and let it knead for 6 minutes.
  2. Divide into two loaves, or make one large one if desired.
  3. Take the dough for the loaf and divide that into three equal pieces and roll into three long “logs”, about 12 inches long.
  4. Braid together and place in a loaf pan or on a lined sheet tray.
  5. Place loafs in a preheated 400 degree oven, and then immediately drop temperature to 325 degrees.
  6. Bake for 25-30 minutes or until the internal temperature reaches 180 degrees.
