This is a wonderful flat bread and it also makes wonderful dinner rolls, light and tender.

Ingredients
  • 1 cup sour dough starter
  • 3 cups hot water
  • 2 egg whites
  • 1 cup feta cheese
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 2 tablespoons olive oil
  • 1 cup whole grain or whole grain flour, teff or amaranth works well
  • 1 cup fresh ground pop corn
  • 5 to 7 cups high gluten white flour
  • 4 tablespoons Saf instant yeast
Instructions
  1. Place all ingredients except feta cheese in WonderMix bowl adding only half the white flour and placing the yeast on top of the flour. Turn on mixer and add more flour until dough pulls away from the sides of the bowl. Mix for 5 minutes and then add feta cheese, knead for another quick minute. Remove from bowl and let rise, and then divide and roll into circles. Top with olive oil, Kosher salt, fresh mozzarella cheese, and rosemary. Bake on a hot pizza stone, 500 degrees is hot. Bake for 5 to 7 minutes depending on oven. Remove and enjoy. Great served with Rigatoni.

Ingredients
  • 1 cup sourdough starter (buy at www.chefbrad.com)
  • ¼ cup sugar
  • 2 cups warm water
  • 3 cups whole grain flour
  • 3 tablespoons yeast
  • 2 tablespoons salt
  • 1/3 cup olive oil
  • ½ cup to 1 cup chopped Kalamta olives
  • 1 cup feta cheese
  • 3 to 5 cups of flour
Instructions
  1. Add the Sourdough Starter, sugar, warm water, flour, and yeast ingredients to a bowl and mix together.
  2. After 20 minutes add the remaining ingredients to the bowl and knead for 6 minutes.
  3. After kneading place dough in an oiled bowl and let rise.
  4. After dough has risen, coat bottom of a jelly roll pan with oil.
  5. Spread and push down dough all around the bottom of the pan.
  6. Using fingers, press indents into the dough all over.
  7. Fill dents with olive oil, sprinkle with rosemary and kosher salt.
  8. Bake in a hot 400 degree oven for 14-15 minutes until done.

Chinese Scallion Bread

These are tender tasty breads that are easy to make and so satisfying.

Chinese Scallion Bread

Ingredients
  • 1 cups (plus) white flour
  • 3 cups brown rice flour
  • Kosher salt
  • 1 ¼ cups boiling water
  • 1 tablespoon sesame oil
  • ½ cup sliced scallions
  • Peanut oil for frying
Instructions
  1. In WonderMix Mixer, add flour and slowly add boiling water in a steady stream while mixing. Keep adding water until a ball is formed. Knead for 3 minutes.
  2. Divide into 5 equal parts. Roll each part into a 7”- 8” circle. Brush with sesame oil and sprinkle with kosher salt and scallions. Roll each circle into a cylinder, pinching the ends closed. With the palm of hand, roll each cylinder until it is 12” long. Coil each cylinder like a snake into a flat round. With a rolling pin, flatten each coil into a 7” circle.
  3. Heat peanut oil in a non-stick pan. Cook each until brown on the first side. Turn and cook on second side until golden brown. Cut into wedges and serve.

Serves: 3 dozen bars
Ingredients
  • 1 cup organic brown sugar
  • 1 cup coconut oil
  • 1 cup Xagave
  • 4 eggs
  • 1 cup organic peanut butter
  • 2 teaspoons vanilla extract
  • Add to mixer the following ingredients and mix well
  • 3 cups fresh ground amaranth flour
  • 1 cup popped Amaranth
  • 2 cups steel cut oats
  • 1 cup cocoa nibs
  • 2 cups pecans chopped
  • 1 cup toasted sesame seeds
  • 1 cup raisins
  • 1 teaspoon sea salt
Instructions
  1. In WonderMix mixer bowl, mix together ingredients until creamy.
  2. After all ingredients are mixed, place in large baking pan and pat down with moist hands.
  3. Bake for about 30 min. in a 350 degree oven.
  4. You can form into bars by scooping up golf ball size amounts of dough, and rolling them into logs.
  5. Place these on a parchment paper and bake for about 20 min. in a 335 degree oven.
  6. Let cool completely.

This dough is almost healthy, you can use all whole wheat flour if you want and it will be great.

Tefff Whole Grain Pizza Dough

Ingredients
  • 1 cup sour dough starter Available at Chef Brad’s web site
  • 2 cups hot water
  • ¼ cup xagave nectar
  • ¼ cup extra virgin olive oil
  • 1 cup Teff
  • 1 cup whole wheat flour
  • 3 cups white flour
  • 3 T. Saf-Instant dry yeast
Instructions
  1. In a WonderMix mixer with a dough hook, add the sour dough bread starter, hot water, xagave, oil, and teff. Then add the whole wheat flour and 2 cups of the white flour. Add the yeast on top of everything and let mix for 6 minutes. Add the rest of the white flour, about 1 more cup, until the dough pulls from the sides of the mixer. Place in a bowl with a little oil and put it in a warm spot to rise for a couple of minutes.
  2. Pizza Assembly:
  3. Divide dough into three pieces to make three pizzas. Put a little oil on the work surface. Sprinkle corn meal and teff on surface and roll out the dough with a rolling pin into a circle. Place on parchment paper. Now you’re are ready to put on the toppings.
  4. For Pesto Sauce Pizza:
  5. Spread a layer of the pesto on the dough. Top with artichoke heart pieces, sliced roasted red peppers, slices of munster cheese and crumbled feta cheese.
  6. For Tomato Sauce Pizza:
  7. Spread an even layer of the tomato sauce on the dough. Top with shredded mozzarella cheese and sliced pepperoni.
  8. Cooking:
  9. Using a pizza paddle, slide the assembled pizzas on parchment paper in a preheated 500 degree oven on a pizza stone. Cook the pizzas for 5-10 minutes, depending on your oven, until dough becomes golden brown and crispy.

  • 3 cups mashed, cooked sweet potatoes or yams
  • 1 cup sugar
  • ½ cup half & half
  • ½ cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • Topping:
  • 2 cups cooked red quinoa
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 cup dark brown sugar
  • 1/3 cup whole grain flour
  • 1/3 cup melted butter
  • Pinch of nutmeg
Instructions
  1. Mix all of the ingredients together in a large bowl. Spread evenly in an oven safe baking dish that has been sprayed with non stick cooking spray. Top the potatoes with the quinoa nut topping and bake in a 375 degree oven for 35 minutes.
  2. Topping:
  3. Melt the butter. Stir in the flour, sugar, nuts, coconut, and nutmeg. Mix together with the cooked red quinoa. Place on top of potatoes.
