Christmas Farmhouse White Bread with Cardamom

Cardamom is certainly a Christmas smell to me. I love the deepness of the aroma and it has a warming effect of me. This is a great bread.

Christmas Farmhouse White Bread with Cardamom

Serves: 2 large loaves
Ingredients
  • 2 cups boiling water
  • ½ cup half and half
  • 2 tablespoons unsalted butter
  • ½ tablespoon salt
  • ½ cup sugar
  • ½ cup dried cherries
  • 1 tablespoon cardamom seeds
  • 3 cups whole grain flour
  • 3 cups white flour
  • 1 tablespoon yeast
Instructions
  1. In a WonderMix mixer, combine all of the ingredients in the order listed. Mix until combined, and let it knead for 6 minutes.
  2. Divide into two loaves, or make one large one if desired.
  3. Take the dough for the loaf and divide that into three equal pieces and roll into three long “logs”, about 12 inches long.
  4. Braid together and place in a loaf pan or on a lined sheet tray.
  5. Place loafs in a preheated 400 degree oven, and then immediately drop temperature to 325 degrees.
  6. Bake for 25-30 minutes or until the internal temperature reaches 180 degrees.

Ingredients
  • ¼ cup coconut oil
  • ½ cup popcorn kernels
  • 1/3 cup sugar
  • 1 tablespoon cinnamon
Instructions
  1. Place oil in a stove top popper, like a Whirly Pop Popcorn Popper, and add the kernels.
  2. Stir on high heat. When corn starts to pop quickly open the lid and add the sugar and cinnamon.
  3. Close lid and continue to stir until the popping stops.
  4. Dump popped corn into a large bowl and enjoy.

Christmas Cashew Corn

Popcorn is probably the most eaten treat around the holiday season. I cannot make this often, I have no self control when it comes to cashew corn.

Ingredients
  • 2 cups cashews, lightly roasted
  • 8 to 10 cups popcorn (about ¾ cup of raw kernels)
  • 1 ½ cups sugar
  • 1 cup butter, only butter
  • ½ cup corn syrup
  • ½ teaspoon cream of tarter
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla
  • ½ teaspoon salt
Instructions
  1. Place popped corn in a large buttered bowl.
  2. Roast nuts and place in the bowl with the popcorn.
  3. In a heavy sauce pan place the sugar, corn syrup, butter, cream of tartar, and salt and bring to a boil on high heat stirring constantly. Drop temperature to medium high heat and cook for 5 minutes or until it reaches a hard ball stage. (Meaning, it forms a ball when dropped into cold water.)
  4. After mixture reaches hard ball stage, remove from heat and add: Vanilla, Baking soda
  5. Stir well and then pour over popcorn and cashews. Mix will to coat popcorn. Pour out onto buttered cookie sheet and press lightly. Cool until hard and breaks into pieces.

Ingredients
  • Marinade
  • 1 habanero chili, seeded
  • ½ cup soy sauce
  • ¼ cup Honey
  • ¼ cup Brown sugar
  • ¼ cup Lime juice
  • ¼ cup Orange juice
  • 1/3 cup Olive oil
  • ¼ cup Apple cider vinegar
  • 4 tablespoons jerk seasoning
  • 6 garlic cloves
  • 4 green onions
Instructions
  1. Place all of the ingredients in a food processor or blender and puree.
  2. Hold back 2 cups for use in the wing sauce.
  3. Place the remaining marinade in a large dish with 5 to 8 lbs. of chicken wings.
  4. Marinate for 6 hours to overnight.
  5. Bake in a 400 degree oven until done, about 25 minutes. Remove and toss with the wing sauce.
  6. Caramelize in a large skillet.

Wing Sauce:
2 cups held back marinade
1 ½ cups BBQ sauce
Place ingredients in a sauce pan and simmer for about 15 minutes.

Christmas Peanut Buttered Corn

Ingredients
  • 1 ½ to 2 cups popcorn kernels (8 cups of popped corn)
  • 1 cup sugar
  • ½ cup Xagave or honey
  • ½ cup light corn syrup (Karo)
  • 1 cup peanut butter (chunky or creamy)
  • 1 teaspoon vanilla
  • Coconut
Instructions
  1. Pop the corn kernels and place in a large bowl or roasting pan. Make sure it is large enough to allow the entire mixture to be well mixed without spilling. Keep popcorn warm in a 250 degree oven if not using it for a few minutes.
  2. Butter the sides of a heavy 1 ½ quart saucepan. Combine sugar, honey, and corn syrup in a pan. Bring mixture to boil, stirring constantly. Boil hard for 2 minutes. Remove from heat.
  3. Stir in the peanut butter and vanilla and mix until a uniform consistency. Pour hot mixture over warm popcorn. Mix thoroughly to coat all popcorn. Allow to cool.
  4. If you’d like, you may add 1 to 1 ½ cups of nuts.

You can use kasha (roasted hulled buckwheat) or hulled buckwheat in this recipe. Kasha has a stronger flavor, but I love it, hulled is milder, but I love it too. Either way you will have a great salad.

  • 2-3 cups hulled Buckwheat, cooked, chilled
  • 1 cup mozzarella cheese balls
  • 3 roasted red peppers, diced
  • 1 handful fresh basil, torn
  • ½ red onion, thinly sliced
  • ½ cup halved cashews
  • Dressing:
  • 1 Tablespoon Tuscan Sunset (Penzey’s) or your favorite Italian seasoning
  • ¼ cup olive oil
  • ¼ cup balsamic vinegar
  • ¼ cup lemon flax oil
Instructions
  1. In a mixing bowl add all of the ingredients for the salad.
  2. Pour dressing over and toss well.
