Halfway Blender Rice Apple Cakes (Pantry Members)

Ingredients
  • 2 cups sweet brown rice*
  • ½ cup golden flax seed*
  • 4 cups milk, soy milk, or rice milk.
  • 2 medium sized apples, cut into sections, no need to remove seeds or skin.
Instructions
  1. In a large blender or Vita Mix* place the above ingredients and blend on high for 2 to 3 minutes. Remove from blender and place in large bowl.
  2. After blending the above ingredients and placing them in a large bowl add the following ingredients and whisk well. If mixture is to thin add any gluten free flour to tighten it up a bit.
  3. eggs
  4. teaspoon salt
  5. tablespoons oil
  6. dash vanilla
  7. dash cinnamon
  8. After whisking well add the following ingredient and whisk quickly and remove whisk from bowl. Let rise and gently remove batter from bowl with a ladle unto a hot griddle or hot waffle iron.

Ingredients
  • 2 large papaya, peel and seeded, cut in cubes (save seeds)
  • 2 cups fresh strawberries
  • 3 ears corn, roasted
  • 1 large fresh pineapple, cored and diced
  • 2 cups farro, cooked and chilled (cook 2:1 ratio for 20 minutes)
  • 2 cups grapes, sliced in half
  • 1 bunch green onions, chopped
  • 1-2 seeded and chopped jalapenos
  • 3 Tablespoons papaya seeds
Instructions
  1. Place all ingredients in a large bowl and toss with dressing.
Dressing

  • 2 cloves garlic, minced
  • One bunch of mint
  • ½ cup olive oil
  • ½ cup flax oil
  • 1/3 cup balsamic vinegar
  • Salt and pepper to taste
Instructions
  1. Place all ingredients in a blender and blend till combined

Freekah Hot Breakfast Cereal

Serves: 6 servings
Ingredients
  • 1 cup freekah cracked with blender or handmill
  • 3-4 cups water
  • 2 tablespoons coconut oil
  • dash sea salt
Instructions
  1. Place grain, water and salt in pressure cooker.
  2. Pressure cook for 12 minutes on high pressure.
  3. When pressure is down, remove lid and stir in coconut oil.
  4. Serve with Xagave, honey or brown sugar.
  5. Top with fruit, yogurt, or half and half.
