Sour Dough Feta Bread (Pantry Members)

Ingredients
  • 1 cup sour dough starter
  • 1 cup feta cheese
  • 1 cup teff
  • 1.5 cups hot water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 1/4 cup olive oil
  • 2 tablespoons yeast
  • 3 to 5 cups natural white flour
Instructions
  1. Preheat oven to 475 degrees.
  2. Place all ingredients in WonderMix bowl except the white flour.
  3. Turn on machine and add more white flour until dough pulls away from the sides of the bowl. Knead for 6 minutes.
  4. Remove from bowl divide into 2 or 3 pieces.
  5. Roll dough out into circles.
  6. Place on parchment paper and cover and let rise.
  7. After dough has risen, using fingers, make indents all over surface of bread.
  8. Brush liberally with olive oil.
  9. Sprinkle with rosemary and kosher salt.
  10. Bake until golden.

This is a wonderful summer salad for the BBQ or picnic. The sweet potatoes make so refreshing and wonderful.

Sweet Potato Salad

Ingredients
  • 4 medium sweet potatoes
  • 1/2 red bell pepper, seeded and diced small
  • 1/2 green bell pepper, seeded and diced small
  • 1/2 red onion, diced small
  • 4 tablespoons finely chopped parsley
  • 2 cups cooked quinoa, red, white, or black
  • Dressing:
  • 3 tablespoons Dijon mustard
  • 3 tablespoons Ketchup
  • 2 minced garlic cloves
  • 3/4 cups extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • Juice of one lime or lemon
  • Splash of Balsamic vinegar
  • Salt and fresh pepper to taste
Instructions
  1. Peel and dice potatoes in large pieces. Pressure for 3 minutes in pressure cooker. Remove lid and place in ice water to chill for 1 minute. Add peppers, onions, quinoa and parsley.
  2. Dressing:
  3. Whisk mustard, Ketchup and garlic together in bowl. Drizzle olive oil in a slow steady stream. Add vinegars, Worcestershire sauce and citrus juice. Mix well. Season with salt and pepper.
  4. Toss with potato mixture and enjoy.

Ingredients
  • 1/2 cup corn meal, (popcorn fresh ground in the WonderMill works great)
  • 3 tablespoons shorting or oil
  • 1/4 cup molasses
  • 2 teaspoons salt
  • 1 cup hot water
  • 1 egg
  • 2 tablespoons Saf instant yeast
  • 2 to 4 cups Natural White Flour
Instructions
  1. Place all ingredients in mixer bowl placing only half the flour on top with the yeast on top of the flour. Turn on mixer and add enough remaining flour until dough cleans the sides of the bowl. Knead for 6 minutes. Remove from mixer and divide into two pieces. Form large balls and place on cornmeal covered parchment paper and let rise until double. Place in hot 400-degree oven for 5 minutes dropping temperature to 325 until bread is done. About 25 minutes. Bread is done when internal temperature reaches 180 degrees.

  • 8 cups romaine lettuce, chopped

  • Dressing:
  • 1 cup olive oil
  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1 teaspoon salt
  • 1 cup chutney or apricot jam
  • dash of cinnamon

  1. Toss all ingredients and prepare dressing and toss with dressing.

  • Marinade:
  • 1 cup olive oil
  • 1 cup orange juice
  • 1 cup honey
  • 1/2 cup balsamic vinegar
  • 1/2 cup honey vinegar
  • 1 teaspoon ground cumin
  • 1 tablespoon Kosher salt
  • Main Ingredients:
  • 1 large fresh pineapple, cut into small pieces
  • 4 large mangoes, cut into small pieces
  • 3 cups fresh strawberries, cut into small pieces
  • 2 to three jalapenos, seeded and chopped small
  • 1 large bunch of cilantro, chopped
  • 1 large red onion, chopped finely
  • 1/4 cup flax oil
  • 1-2 cups cooked red quinoa
  • 1 cup cooked, drained beans, Colorado river, Tongues of fire, Rattlesnake, etc.
  • Salt to flavor
Instructions
  1. Cover fresh fish with marinade and let set overnight.
  2. After marinating fish over night, drain and discard juice from fish. Take fish and sear on high heat non stick skillet. Cook both sides until fish is done. Flake fish and place in a fresh corn tortilla and top with fruit and fresh grated Mexican Cheese.
