Farro Papaya Salad

Ingredients
  • 2 large papaya, peel and seeded, cut in cubes (save seeds)
  • 2 cups fresh strawberries
  • 3 ears corn, roasted
  • 1 large fresh pineapple, cored and diced
  • 2 cups farro, cooked and chilled (cook 2:1 ratio for 20 minutes)
  • 2 cups grapes, sliced in half
  • 1 bunch green onions, chopped
  • 1-2 seeded and chopped jalapenos
  • 3 Tablespoons papaya seeds
  • Dressing:
  • 2 cloves garlic, minced
  • One bunch of mint
  • ½ cup olive oil
  • ½ cup flax oil
  • 1/3 cup balsamic vinegar
  • Salt and pepper to taste
Instructions
  1. Place all Dressing ingredients in a blender and blend till combined
  2. Place all Salad ingredients in a large bowl and toss with dressing.

  • 6 cups cooked pasta
  • 
1 can roasted red peppers chopped
  • 1 cup fresh, basil chopped
  • 2 cups cooked kamut
  • 1 1/2 cups olives
  • 2 cups artichoke hearts
  • 1 onion chopped
  • 
2 cups grape tomatoes sliced
  • 1 cup roasted pistachio nut
  • 
2 cups steamed broccoli
  • Gorgonzola Vinaigrette:
  • 
2 tablespoons cilantro pesto
  • 2 cups olive oil
  • 
2/3 cup white wine vinegar
  • 
1/2 cup Xagave
  • 1 tablespoon pepper
  • 1/4 teaspoon sea salt
  • 3/4 cup gorgonzola cheese
Instructions
  1. Toss all ingredients together in large bowl and toss with dressing.

Ingredients
  • 4 cups black barley cooked, chilled
  • 2 heads cabbage thinly shredded
  • 3 (15-ounce) cans mandarin oranges, drained
  • 1 cup golden raisins
  • 1/2 cup scallion
  • 2 cups slivered, or sliced almonds
  • 1 (12-ounce) bag Chinese crunchy noodles for garnish
  • Dressing
  • 2 tablespoons fresh grated ginger root, or 2 tsp. ginger powder
  • 2 teaspoons Chinese Five Spice Blend
  • 1 cup olive oil
  • 1/4 cup sesame oil
  • 1/3 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/3 cup Xagave, or honey
  • 1 teaspoon sea salt
Instructions
  1. Whisk dressing ingredients together, combine salad ingredients in large bow and toss with dressing. Garnish with Chinese noodles.

Sorghum Green Bean Salad

Ingredients
  • 3 cups whole grain sorghum cooked
  • 
4 pounds fresh green beans
  • 
2 cups grape tomatoes sliced
  • 
1 cup sliced almonds
  • 
mozzarella balls
  • 1/2 cup olive oil
  • 1/2 cup balsamic vinegar
  • 1/2 cup Xagave
sea salt
pepper
Instructions
  1. In large sauce pan heat oil.
  2. When hot add green beans and coat with oil.
  3. Add vinegar and Xagave.
  4. Cook on high tossing green beans until caramelized and tender.
  5. toast up the sorghum in 1/4 cup olive oil, then put on a big platter.
  6. Continue to layer with green beans, tomatoes, mozzarella balls, and almonds.
  7. Salt and pepper to taste.
  8. For added fun, top with popped sorghum.

Ingredients
  • 3 sliced apples french fry style
  • 
4 peeled kiwi fruits and cut into cubes

3 heads fresh Romaine lettuce
  • feta cheese or goat cheese
  • 
1/2 cup golden raisins
  • 1/2 cup walnuts chopped
  • 
1 peeled, cored fresh pineapple cut in chunks
  • 2 cups cooked kaniwah grain
  • Dressing Ingredients
:
  • 1/2 cup olive oil
  • 1/2 pomigranite/blueberry omega swirl
  • 
1/2 cup raspberry jam
  • 1/4 cup Xagave
  • 
1 teaspoon nutmeg
Instructions
  1. Wash and chop romaine lettuce, place in large bowl, slice apples french fry style, do not peel or seed.
  2. Place apples in a bowl with pineapple, walnuts, raisins, and grain.
  3. Mix all dressing ingredients into a blender and blend until smooth.
  4. Toss with salad and finish with feta cheese on a bed of romaine lettuce.
