This is an amazing way to eat potatoes, it is great hot or cold.

Ingredients
  • For the Dough
  • In your mixer bowl place the following ingredients and let sponge for 20 minutes.
  • 1 cup sour dough starter
  • ¼ cup sugar
  • 2 cups warm water
  • 2 cups flour
  • 3 tablespoons yeast
  • After 20 minutes, add the following ingredients to the bowl and knead for 6 minutes. After kneading place dough in oiled bowl and let rise.
  • 2 tablespoons salt
  • ½ cup or more of whole grain Teff
  • 1/3 cup of feta cheese
  • 3 to 5 cups flour
  • For Filling
  • 4 large potatoes, sliced and steamed (2-3 per pie)
  • 3 cups cheddar jack cheese blend
  • Ham
  • Sausage
  • Onion
  • Olive oil
  • Salt and pepper
  • Rosemary
Instructions
  1. After dough has raised, divide into four pieces and roll out like a pizza, except leave the dough thicker.
  2. Place one piece on a parchment pepper and top with the filling ingredients.
  3. Roll out 2nd portion of dough and place on top of the first piece.
  4. Fold and crimp edges.
  5. Top with olive oil, rosemary, and kosher salt.
  6. Bake on a hot pizza stone preheated in a 500 degree oven for 12-15 minutes.
  7. This recipe makes two pies.

This is a wonderful recipe, One of my all time favorites. In the pantry you will find step by step instructions for making this great recipe.

Spinach Pie

Ingredients
  • In your mixer place the following ingredients and let sponge for about 20 minutes:
  • 2 cups sour dough starter
  • ½ cup sugar
  • 1 cup potato flakes
  • 1 cup oatmeal and ½ cup cooked Quinoa
  • 4 cups hot water
  • ¼ cup yeast
  • After 20 minutes add the following ingredients and mix for six minutes.
  • ½ cup olive oil
  • 4 whole eggs
  • 2 tablespoons kosher salt
  • 2 tablespoons Chef Brad’s Italian seasoning
  • 4 t0 8 cups of natural white flour (add flour until dough cleans the side of the bowl)
  • After six minutes place dough in a oiled bowl and let rise to double.
  • For the pies:
  • 8 Italian sausages
  • 6 cups mozzarella cheese
  • 2 cups feta cheese
  • 2 cups mushrooms
  • Cooked and drained spinach, about 4 cups
  • Olive oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Divide the dough into 4 pieces. 2 being a bit larger than the other 2.
  3. Roll the dough out to about 14 inches using the large piece of dough.
  4. Place in oiled pan. Spread half the ingredients on the dough.
  5. Roll out a smaller piece of dough to about 14 inches.
  6. Place on top of first piece and ingredients.
  7. Repeat process with remaining dough and ingredients.
  8. After oven is preheated drizzle pie with olive oil and sprinkle with kosher salt.
  9. Bake in oven dropping temp to 335 degrees for 25 to 30 minutes.
  10. Remove from oven and gently remove from pan. Slice and serve with dipping sauce
Dipping Sauce

  • 1 can tomato sauce
  • 2 tablespoons Chef Brad’s Italian seasoning
  • 3 tablespoons Olive Oil
Instructions
  1. Mix all ingredients well.
