A totally different twist to a breakfast syrup.  It is almost like a peach gravy.  True comfort food.

 

Freekah Peaches & Cream Pancake & Waffle Topping

Ingredients
  • 4 pealed and sliced ripe peaches or 2 cans drained
  • 3 cups half and half
  • 1/4 cup finely ground freekah flour
  • 1/4 cup butter
  • 2/3 cup Xagave or 1 cup sugar
  • 1 tablespoon vanilla extract
  • 1 tsp fresh ground nutmeg
  • pinch sea salt
Instructions
  1. In sauce pan, melt butter and lightly toast freekah flour to create a Rue. Add half and half and whisk until thick, add Xagave (sugar), vanilla, nutmeg, and salt. Whisk again until thick and add peaches. Serve warm over pancakes or waffles. This should not be gravy thick nor should it be watery thin. If too thick add more half and half.

  • 1 cup sourdough starter
  • 3/4 cup potato flakes
  • 4 eggs
  • 1/4 cup oil
  • 1/4 cup sugar
  • 1/4 cup canola oil
  • 1 t. salt
  • 2 T. Rumford baking powder
  • 2 cups milk
  • 2 cups flour
Instructions
  1. Mix all ingredients in WonderMix bowl with whip attachment. Cook on a hot griddle. Serve with butter and real maple syrup. Top off with fresh fried eggs.

Stuffed Pancakes

Ingredients
  • 3 Teaspoons instant yeast
  • 2 eggs
  • 4 Teaspoons sugar
  • 3 cups natural white flour or fresh ground Kamut flour
  • 1/2 cup semolina flour
  • 3/4 cup milk
  • 1/2 teaspoon baking soda
  • 2 cups water
Instructions
  1. Place all ingredients in WonderMix mixer bowl and mix well for 3 minutes.
  2. Batter should be thinner than a regular pancake.
  3. If too thick, add a little more milk.
  4. It may need more depending on the type of flour used.
  5. Cover and let stand at room temperature for 1 hour.
  6. To cook, preheat griddle on high.
  7. Brush or spray with non-stick oil.
  8. Ladle enough batter onto griddle, about 1/3 cup, to create a 5 to 6 inch pancake.
  9. Cook on one side only for about 2 minutes, or until top is almost dry.
  10. Remove from griddle and fill with filling.
  11. Fold over and gently crimp edges with fingers.
  12. Place on cookie sheet and continue to bake until batter is finished.
  13. Brush with butter and bake for 5 minutes in a hot 350 degree oven.
  14. Remove from oven and top with lemon syrup.

Filling:
Chef Brad’s apple, strawberry, lemon, or raspberry fillings work great.

Syrup:
Using 1/2 cup of above fillings, add 1 cup sugar to 2 cups water and bring to boil.
Whisk gently and serve hot.

Wonder Flour can be used in this recipe.

Ingredients
  • 2 cups WonderFlour™
  • 2 eggs
  • 2 tablespoons Oil
  • 2.5 cups buttermilk
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 3 teaspoons Rumford’s Baking Powder
Instructions
  1. Place all ingredients in a mixing bowl, except baking powder.
  2. Whisk well.
  3. Add baking powder and quickly whisk again.
  4. Do not mix again. Cook on hot griddle.
Buttermilk Syrup

Ingredients
  • ½ cup butter
  • ½ cup buttermilk
  • 1 cup sugar
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
Instructions
  1. Place butter, buttermilk, and sugar in deep pan.
  2. Bring to boil and add vanilla and baking soda.
  3. Whisk, this will foam up a lot, make sure you have a deep pan.
  4. I usually double or triple the recipe.
  5. Enjoy.
