Burger Buns whole grain

Whole Grain Hamburger Buns

Ingredients
  • 2 cups warm milk
  • 1 cup sourdough starter
  • 1/4 cup oil or butter
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 teaspoons salt
  • 3 cups whole wheat or spelt flour, fresh ground
  • 1/4 cup teff or fresh ground pop corn, don’t grind the teff, but if using popcorn grind in your Wondermill
  • 2 tablespoons Saf instant yeast
  • Natural white flour
Instructions
  1. Add ingredients in the order given to your WonderMix Turn on mixer and add white flour until dough pulls away from the sides of the bowl. Mix for 6 minutes.
  2. Remove and divide into 12 pieces or 24 if doing sliders. Roll into balls using your cupped hand. Flatten into burger size circles, place on parchment paper, 6 to a pan, leaving plenty of room for them to grow.
  3. Brush with egg white and sprinkle with sesame seeds. Let rise to double and then bake in a 400 degree oven for 5 minutes and then drop temperature to 325 degrees and cook for another 6 to 10 minutes.

Options:

  • Bacon and feta cheese
  • Golden raisins and dill
  • Smoked Spanish Paprika and kalamata olives

The options can be added in the beginning of the process in your bowl, with the exception of Feta cheese. Always add the Feta in the last minute of kneading to retain shape and texture .
Sometimes I use all natural white Flour and no spelt flour and just add the teff. It depends on the mood I am in. Bread does not always have to be healthy as long as we are using chemical free quality products. You can also do this recipe with whole wheat if you desire.

Spelt Walnut Coffee Cake

 

Streusel

Ingredients
  • 1/2 cup brown sugar
  • 1 cup fresh ground spelt flour
  • 2 teaspoons baking spice or cinnamon
  • dash salt
  • 6 tablespoons butter, cut into pieces
  • 1 cup nuts
Instructions
  1. Place all ingredients in your WonderMix bowl with wire whips.  Turn on and mix until ingredients are mixed coarsely.  Remove from mixer bowl and place in small bowl,  set aside.
Cake

Ingredients
  • 12 tablespoons butter,  room temperature
  • 1 3/4 cup coconut sugar
  • 3 large eggs
  • 2 teaspoons  vanilla
  • 1 1/2 cups sour cream
  • 3 cups fresh ground spelt flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
Instructions
  1. Place butter and sugar in WonderMix bowl with wire whips and whip until mixed well.
  2. Add eggs one at a time and mix.
  3. Adds vanilla and sour cream and mix.
  4. Add remaining ingredients and mix well.
  5. Remove and place half the batter in a bundt cake pan.
  6. Place 3/4 of the Streusel over the batter.
  7. Add the remaining batter avengingly over Streusel.  Place remaining Streusel over the batter.
  8. Bake in a 350 degree oven until done, about 45 to 50 minutes.  Test with toothpick,  toothpick will come out clean when done.
Glaze

Ingredients
  • 3 cup confectioners sugar, powdered
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla
  • 1/4 cup heavy cream or buttermilk
  • 1/2 cup chopped nuts for garnish
Instructions
  1. Place melted coconut oil, cream, or buttermilk,  and vanilla in blender.  Add powdered sugar and blend.  Pour over cooled cake.  Top with chopped walnuts if desired. Keep covered and enjoy.  Coffee cakes actually taste better the next day.

 

For Gluten free use a combination of three or more gluten free grains ground on the finest setting of your WonderMill.  Also add 1/2 cup potato starch to recipe.

Ingredients
  • 1 cup fresh blueberries or strawberries
  • 2 small cans mandarin oranges, drained
  • 2 bananas, sliced
  • 1 cup pecans, lightly chopped
  • 2 cups cooked red quinoa
  • 4 cups cooked soft white wheat and spelt (Can use cooked kamut, farro, and barley).
  • Dressing:
  • 1/4 cup each of the following ingredients:
  • Flax oil
  • Olive oil
  • Honey
  • Golden Balsamic vinegar
Instructions
  1. Toss all ingredients in large bowl and toss with fruit dressing.
  2. Dressing:
  3. Whisk with dash of salt and nutmeg, and 1/2 teaspoon fresh grated ginger.

Ingredients
  • 1 lb. strawberries
  • 1-2 pints raspberries
  • 1 fresh pineapple, cored and diced
  • 1 can great northern beans, drained and rinsed
  • 2-3 cups cooked spelt
  • 1 container crumbled goat cheese
  • Dressing:
  • ¼ cup fig jam
  • ¼ cup Total Omega Swirl – Orange cream
  • 1-2 Tablespoons Xagave
  • 1 Tablespoon olive oil
  • Splash of balsamic vinegar
  • Pinch of salt
Instructions
  1. In a large bowl combine all ingredients but cheese and toss with dressing. Sprinkle goat cheese crumbles on top.

Ingredients
  • 3 cups spelt flour
  • 1 T. baking powder
  • 1 T. sugar
  • 2 t. salt
  • ½ cup finely chopped fresh chives
  • 5 oz. grated sharp cheddar cheese
  • 2 cups buttermilk + additional
Instructions
  1. Preheat oven to 375 degrees.
  2. Whisk together flour, baking powder, sugar, and salt. Add chives and cheddar, tossing to combine. Stir in buttermilk with a fork until a sticky dough forms.
  3. Turn dough out onto a lightly floured surface and knead 8 times with floured hands. Form into a round loaf. Brush top of round with additional buttermilk and cut each into 8 wedges.
  4. Arrange wedges about ½ inches apart on an ungreased large baking sheet and bake until golden brown, about 20 minutes. Cool on a rack.

  • 2 cups freshly ground popcorn
  • 2 cups WonderFlour™ or spelt flour
  • ½ cup white sugar
  • 1 teaspoon salt
  • 1-2 cups cooked white quinoa
  • 1 ear of corn, roasted, kernels removed
  • 2 1/3 cups buttermilk
  • 2 eggs
  • ½ cup butter
  • 2 Tablespoons baking powder
Instructions
  1. Mix all ingredients in a bowl, whisking together till just combined.
  2. Preheat oven to 375-400 degrees (depending on how hot your oven runs).
  3. Place batter in a sprayed baking dish and place in oven to bake for about 15-25 minutes.
