Fresh Apple Cake

This is an amazing cake, so tender and the chipotle sauce is amazing over the top.

Fresh Apple Cake

Ingredients
  • 3 to 4 large baking apples, peeled
  • 1 cup butter
  • 1 ½ cups maple syrup
  • 4 eggs
  • 1 cup half and half
  • 2 teaspoons vanilla
  • 3 ½ cups fresh ground spelt flour
  • 1 Tablespoon baking powder
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon dried chipotle chili powder
  • 1 teaspoon salt
  • 1 cup chopped walnuts
Instructions
  1. Grate apples on a fine grater. Place butter, syrup, eggs, half and half, and vanilla in a mixer and whip until mayonnaise like texture. Add remaining ingredients and place in large pan and bake 35 to 45 minutes in a preheated 350 degree oven.
  2. When cake comes out of oven pour Chipotle Caramel Sauce over it and serve.
Chipotle Caramel Sauce

Ingredients
  • 2 sticks butter
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 1 teaspoon chipotle chili powder
Instructions
  1. Bring butter and sugar to boil, add cream and chili powder and simmer.
  2. Serve over hot cake.
