Buckwheat Olive Flat Bread

This is a simple wonderful bread that goes with anything.

Buckwheat Olive Flat Bread

Serves: 2 or 3 large flat breads
Ingredients
  • 2 cups hot water
  • 1 tablespoon salt
  • 1/4 cup oil
  • 1/4 cup xagave
  • 1 small jar pitted kalamta olives, chopped
  • 2 cups fresh ground buckwheat
  • 4 to 5 cups high gluten flour or fresh ground wheat flour
  • 2 tablespoons saf instant yeast
  • fresh rosemary and thyme for garnish
  • extra olive oil for baking
Instructions
  1. Place all ingredients in WonderMix mixer, using only half the flour and placing the yeast on top.
  2. Turn on the mixer and add flour until dough pulls away from the sides of the bowl.
  3. Knead for 6 minutes.
  4. Remove from bowl and divide dough into 2 or 3 pieces.
  5. Roll out and let rise.
  6. Using fingers, make indents in the dough and fill will oil and top with fresh herbs, kosher salt, and grated parmesan cheese if desired.
  7. Bake on parchment on a heated pizza stone at 500 degrees.

Ingredients
  • 1 cup sour dough start

  • 2 cups hot water

2 cups brown rice cooked
  • 
5-7 cups flour combonoation of white and wheat flour

2 tablespoons saf yeast

Low fat mozzarella cheese, grated
  • 1 tablespoon fresh or 1/2 tablespoon dried rosemary
Instructions
  1. Place all ingredients in WonderMix mixer bowl adding only half the flour and placing the yeast on top of the flour.
  2. Turn on mixer and add more flour until dough pulls away from the sides of the bowl.

This is a tried and true recipe that always works. I use the WonderMix mixer for the best results. In fact the serious bread maker really needs a WonderMix mixer. You can have 5 loaves done in 1 hour and 10 minutes from start to finish.

Basic Bread, by hand

Bread is the staple of life. It can be nourishing and it is a wonderful comfort food. Fresh baked bread from the oven can bring a family together and create fond food memories that can last forever. This is a tried and true “by hand” recipe, it can be made in a mixer, but I love doing this by hand. It takes a little longer, but the end result is amazing and worth the effort.

Ingredients
  • 3 cups hot water
  • 1 /3 cup sugar
  • ¼ cup butter, oil, lard, or Crisco
  • 2 teaspoons salt
  • 2 tablespoon yeast, Saf instant
  • 5 + cups of flour
Instructions
  1. In a bowl add water, sugar, oil, salt, 2 cups flour. Mix well with a spoon and add yeast and 3 cups of flour. Mix well and than dump out on a flour surface. Start kneading by folding the closest edge to you away from you towards the furthest edge. With the ball of the hand, press the folded edge into the dough turning the dough around as you complete the fold. Keep repeating the process adding flour as needed, being careful not to add to much flour. After the dough is well kneaded, about 6 to 8 minutes, place in oiled bowl and cover and let rise to double. Punch down and from into loafs, 2, and let rise again until double. Bake in a 350 degree oven until done, about 30 minutes.
  2. For Whole Grain Bread, substitute 3 cups of white flour with fresh ground whole wheat flour and let rise until double, twice, before forming into loafs.
  3. For Cinnamon Bread, before placing in bread pan to bake, roll out each loaf and spread with cinnamon and sugar. Roll up into a loaf and place in oiled pan and let rise until
  4. double.
  5. For Cinnamon Rolls, Roll out entire dough after first rising, spread with butter and than with cinnamon and sugar mixture. Sprinkle lightly with water and than roll up tight and cut into rolls. Place in sprayed baking pan and let rise to double. Bake for 5 minutes in a 400 degree oven and than drop the temp to 325 degrees and bake for 12 more minutes. Top with a sugar glace and enjoy.
  6. For Fry Bread, divide the dough into small golf ball pieces and roll out on a oiled surface and fry in hot oil, flipping over and cooking both sides. Top with honey or use for Navajo tacos.

Ingredients
  • 6 cups hot water
  • 2 cups 14-grain mix (available for Pantry Members under “Top Secret Grain Blends”)
  • 3 cups high gluten wheat flour
  • 2/3 cup canola oil (cold pressed)
  • 2/3 cup honey or sugar
  • 2 tablespoons salt
  • 3 tablespoons dough enhancer
  • 3 tablespoons Saf yeast
  • 10 or more cups fresh ground whole-wheat flour (prairie gold)
Instructions
  1. Preheat oven to 400 degrees.
  2. Combine ingredients in WonderMix mixer bowl with dough hook, using only half the flour, with the yeast on top. Begin mixing, add flour until dough cleans sides of bowl. Knead 6 minutes or until the gluten has developed.
  3. Divide into 5 loaves, cover, and let rise in loaf pans, sprayed with nonstick pan spray until double in size. After placing bread in oven, drop temperature to 325 degrees. Bake 20-25 minutes, or until internal bread temperature reaches 180 degrees.
