This is a wonderful fusion salad. Old world grain with a wonderful new age Chinese taste that will delight you.

KAMUT Chinese Salad (Pantry Members)

Ingredients
  • 1 cup Kamut™, cooked, drained and chilled
  • 1 head Napa Cabbage, shredded thin
  • 2 red bell peppers, seeded and sliced thin
  • 1 cup bean sprouts
  • 1 cup snow peas, trimmed and sliced thin
  • 4 scallions, sliced thin
  • 1 cup shredded raw almonds
  • 1 can mandarin oranges, drained, for garnish
  • I cup fried chow mien noodles, for garnish
  • Dressing
  • ½ cup sesame oil or peanut oil, pure cold pressed (If it does not smell like sesame or peanut it is not the right thing)
  • ½ cup rice vinegar
  • 6 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon ginger, fresh grated
  • ¼ cup honey or Xagave
Instructions
  1. Toss cabbage with grain, bell peppers, sprouts, peas, scallions, and almonds. Toss with dressing and plate. Garnish with oranges and noodles.
