This is a wonderful fusion salad. Old world grain with a wonderful new age Chinese taste that will delight you.
KAMUT Chinese Salad (Pantry Members)

Ingredients
- 1 cup Kamut, cooked, drained and chilled
- 1 head Napa Cabbage, shredded thin
- 2 red bell peppers, seeded and sliced thin
- 1 cup bean sprouts
- 1 cup snow peas, trimmed and sliced thin
- 4 scallions, sliced thin
- 1 cup shredded raw almonds
- 1 can mandarin oranges, drained, for garnish
- I cup fried chow mien noodles, for garnish

- Dressing
- ½ cup sesame oil or peanut oil, pure cold pressed (If it does not smell like sesame or peanut it is not the right thing)
- ½ cup rice vinegar
- 6 tablespoons hoisin sauce
- 3 tablespoons soy sauce
- 1 tablespoon ginger, fresh grated
- ¼ cup honey or Xagave
Instructions
- Toss cabbage with grain, bell peppers, sprouts, peas, scallions, and almonds. Toss with dressing and plate. Garnish with oranges and noodles.
