Spelt Chocolate Cupcakes

Ingredients
- 2 cup wonder flour or fresh ground spelt flour
- 1 cup powdered sugar
- 1 1/2 cups Xagave
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons vanilla extract
- pinch of cinnamon
- 6 eggs
- 1 cup buttermilk
- 1/4 cup baking cocoa powder
- 1 teaspoon baking powder
Instructions
- Step one, cream following ingredients together: 1/2 cup wonder flour or fresh ground spelt flour, 1/2 cup powdered sugar, 1/2 cups Xagave, 1 teaspoon salt, 2 teaspoons baking soda, 2 teaspoons vanilla extract, pinch of cinnamon.
- Step two, add: eggs one at a time
- Step three, whisk in: 1 cup buttermilk.
- Step four, whisk together following ingredients and add to step one, two, and three. 1 1/2 cups WonderFlour or fresh ground spelt flour, 1/2 cup powdered sugar, 1/4 cup baking cocoa powder, 1 teaspoon baking powder.
- Beat till smooth.
- Fill cupcake liners 3/4 full and bake in a 350 degree oven for about 16 minutes. This recipe can be used for layer cakes or sheet cakes.
- Top with butter cream frosting.
Butter Cream Frosting

- 1 pound soft butter
- 8 ounces cream cheese
- 1/2 cup baking cocoa powder
- 1/4 cup heavy cream
- powdered sugar
Instructions
- Cream first 4 ingredients, then add powdered sugar till you like consistency.
