This is a simple tasty dish that can be served with grilled chicken or fish, or just eat it by itself.

Sweet Sticky Rice with Mangoes & Coconut Cream

Ingredients
  • 2 cups warm cooked short grain brown rice,
  • 1 cup cooked quinoa
  • 1 cup coconut cream
  • ½ teaspoon salt
  • 3-6 tablespoons sugar or Xagave
Instructions
  1. Combine coconut cream, salt and sugar in medium saucepan. Bring to boil over medium heat, stirring well to dissolve the sugar. Cover and remove from heat.
  2. Place rice and quinoa in a large mixing bowl. Pour in the coconut cream sauce and stir gently to blend. Cover with plastic wrap. Set aside for 30-40 minutes. Serve rice at room temperature with slices of fresh mango, and if desired sprinkle with sesame seeds.
