This soup is a great way to get rid of the left over Thanksgiving turkey.

 

Roasted Paprika Turkey Potato Soup (Pantry Members)

Ingredients
  • 2 cups chopped turkey
  • 4 yukon gold potatoes
  • 1 garlic clove,minced
  • 1/2 small onion, chopped
  • 1 cup mixed frozen veggies
  • 1/2 cup white quinoa
  • 6 to 8 cups chicken broth or vegetable broth
  • 3 tablespoons Roasted Spanish Paprika, Penzeys brand
  • Salt and Pepper
  • Ultra Gel for thickening or corn starch
Instructions
  1. Place all ingredients in the pressure cooker except for the thickener. Cook for 6 minutes. Release pressure and thicken. Enjoy
