Avocado Pumpkin Seed Salsa

Ingredients
  • 4 ready avocados, ready means firm, but not green or mushy
  • 1 large bunch cilantro
  • 2 serrano chili peppers, seeded if you want milder
  • 1 large bunch fresh parsley
  • 1/2 cup roasted pumpkin seeds or pepitas
  • 1/4 cup fresh lemon juice
  • 2 garlic cloves
  • 1/4 cup olive oil
  • Salt and pepper to taste
Instructions
  1. In food processor place cilantro, parsley, garlic, serrano chilies, lemon juice, and olive oil. Chop. In a separate bowl add chopped avocados and pumpkin seeds. Combine all ingredients together. Gently mix. Can be made ahead and chilled for several hours.
