Roasted leeks really add a great new flavor to mashed potatoes.

Roasted Leek Mashed Potatoes

Ingredients
  • 2 large leeks, cut in half length ways and roasted in the oven. You can place them under the broiler or bake in a 450 degree oven.
  • 2 to 4 lbs. golden potatoes, washed and any bad parts removed
  • Salt and pepper
  • Butter
  • Sour cream
Instructions
  1. Cook whole potatoes in pressure cooker for 12 minutes.
  2. After cooking, drain water and add roasted chopped leeks, butter, 1 to 2 cubes, sour cream, 2 to 3 cups, and salt and pepper.
  3. Mash well adding milk if needed.
