These are great protein bars, filled with wonderful ingredients that taste great and are good for you.
Amaranth Protein Bars

Serves: 3 dozen bars
Ingredients
- 1 cup organic brown sugar
- 1 cup coconut oil
- 1 cup Xagave
- 4 eggs
- 1 cup organic peanut butter
- 2 teaspoons vanilla extract
- Add to mixer the following ingredients and mix well
- 3 cups fresh ground amaranth flour
- 1 cup popped Amaranth
- 2 cups steel cut oats
- 1 cup cocoa nibs
- 2 cups pecans chopped
- 1 cup toasted sesame seeds
- 1 cup raisins
- 1 teaspoon sea salt
Instructions
- In WonderMix mixer bowl, mix together ingredients until creamy.
- After all ingredients are mixed, place in large baking pan and pat down with moist hands.
- Bake for about 30 min. in a 350 degree oven.
- You can form into bars by scooping up golf ball size amounts of dough, and rolling them into logs.
- Place these on a parchment paper and bake for about 20 min. in a 335 degree oven.
- Let cool completely.
