White Quinoa Cabbage Soup

Ingredients
  • 3 cups finely shredded cabbabe
  • 1 large yellow onion, minced
  • 1 large carrot, minced
  • 1 cup white quinoa
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 8 cups beef broth, I love Haco
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Cheddar cheese, Parmesan Cheese or Sour Cream for garnish
Instructions
  1. In pressure cooker saute in butter the cabbage, garlic, and onion.
  2. Saute until tender.
  3. Add remaining ingredients and pressure for 6 minutes.
  4. Remove lid and garnish with desired topping.
