Tomatoes roasted in the oven are amazing. Add sugar and basil and it becomes wonderful. I love this with meatballs and pasta.
Oven Roasted Tomato Sauce

- 12 roma tomatoes cut in half length ways
- 1/2 cup sugar
- 2 teaspoons sea salt
- 2 teaspoons pepper
- 1/4 teaspoon anise seed
- 12 cloves garlic
- 1/4 onion chopped fine
- 1/3 cup fresh basil chopped fine
- 1/3 cup olive oil
Instructions
- Place sugar, salt, and pepper in a gallon size zip lock bag.
- Place tomatoes in bag and shake to coat with mixture then poor in oven safe pan.
- Then Saute’ garlic and onion in oil until tender, add basil and saute’ for a moment.
- Poor over tomatoes and place in 400 degree oven until tomatoes appear crispy around the edges.
- After tomatoes are cooked remove from pan with juice, cool and place in blender and blend.
