Apple Almond Salad

Ingredients
- 3 fresh apples
- 1 container goat cheese crumbles
- ½ cup golden raisins
- ½ cup chopped almonds
- 3 cups chicken breast, cooked, diced
- 2 cups cooked red quinoa
Instructions
- Wash and dice apples (no need to peel or seed them).
- Place in a large bowl and add in the rest of the ingredients BUT the goat cheese.
- Toss with the dressing and then finish with the crumbled cheese.

- ½ cup olive oil
- ¼ cup balsamic vinegar
- ½ cup jam of choice (ex: raspberry, fig, etc.)
- 1 Tablespoon Xagave
- 1 onion, diced, caramelized
Instructions
- In a sauté pan caramelize onion.
- Combine all of the ingredients.
- To Caramelize an onion, slice really thin and in a sauté pan add 2 to3 tablespoons of oil and 2 tablespoons of sugar.
- Cook sugar in oil until it starts to brown and then add sliced onion and sauté until translucent.
