This salad is so refreshing and it can be changed simply by using seasonal fresh fruit.
Top of the Morning Fruit Salad

Ingredients
- 1 cup fresh blueberries or strawberries
- 2 small cans mandarin oranges, drained
- 2 bananas, sliced
- 1 cup pecans, lightly chopped
- 2 cups cooked red quinoa
- 4 cups cooked soft white wheat and spelt (Can use cooked kamut, farro, and barley).

- Dressing:
- 1/4 cup each of the following ingredients:
- Flax oil
- Olive oil
- Honey
- Golden Balsamic vinegar
Instructions
- Toss all ingredients in large bowl and toss with fruit dressing.

- Whisk with dash of salt and nutmeg, and 1/2 teaspoon fresh grated ginger.
