Southern Style cornbread is almost always baked in a hot cast iron skillet pulled right out of the oven. This recipe used fresh ground pop corn for a deeper richer flavor.

Ingredients
- 2 cups fresh ground popcorn
- 1 ½ cups WonderFlour™
- 2 teaspoons salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 tablespoons sugar
- 3 eggs, beaten
- 1 tablespoon vegetable oil or bacon drippings
- 2 cups buttermilk
- ¼ cup melted butter
Instructions
- Preheat oven to 425 degrees. Put oil or drippings in a 10 inch cast iron skillet and place in oven to preheat while making the better
- In a mixing bowl, combine cornmeal, flour, salt, baking powder, soda, and sugar.
- In another bowl whisk eggs, milk, and butter. Combine other ingredients and stir until all ingredients are moistened.
- Remove the hot cast iron skillet from the oven and pour the batter in the skillet and return to oven and bake for about 25 minutes or until a toothpick comes out clean.
- Remove from oven and brush with melted butter.
