Red Quinoa Bean Fruit Salad (Pantry Members)

Ingredients
- Salad Ingredients:
- 3 cups steamed red quinoa
- 3 cups grapes, sliced in half
- 3 cups strawberries, sliced
- 3 apples, chopped
- 2 cups toasted slivered almonds
- 2 cups cooked, chilled Colorado River beans
- 2 bananas, sliced
- 1 pineapple, sliced and diced
- 4 cups romaine lettuce, chopped

- Pineapple Honey Dressing:
- Core of one pineapple
- 1/3 cup honey
- 1/3 cup honey vinegar
- 1 cup flax oil
- 2 slices pickled lemon
- 1 1-inch piece of fresh ginger
- 1 teaspoon salt
Instructions
- Salad Ingredients: Place all ingredients in large bowl and toss with dressing
- Pineapple Honey Dressing: Place all ingredients except oil in Vita mix blender. Blend and add oil. Toss with salad.
