Red Quinoa Bean Fruit Salad (Pantry Members)

Ingredients
  • Salad Ingredients:
  • 3 cups steamed red quinoa
  • 3 cups grapes, sliced in half
  • 3 cups strawberries, sliced
  • 3 apples, chopped
  • 2 cups toasted slivered almonds
  • 2 cups cooked, chilled Colorado River beans
  • 2 bananas, sliced
  • 1 pineapple, sliced and diced
  • 4 cups romaine lettuce, chopped
  • Pineapple Honey Dressing:
  • Core of one pineapple
  • 1/3 cup honey
  • 1/3 cup honey vinegar
  • 1 cup flax oil
  • 2 slices pickled lemon
  • 1 1-inch piece of fresh ginger
  • 1 teaspoon salt
Instructions
  1. Salad Ingredients: Place all ingredients in large bowl and toss with dressing
  2. Pineapple Honey Dressing: Place all ingredients except oil in Vita mix blender. Blend and add oil. Toss with salad.
