For the Olive stuff:
2 cups green olives with pimentos
½ small onion
½ cup capers
Splash balsamic vinegar
1/3 cup olive oil
2 teaspoons salt
1 clove garlic
Place all ingredients into a food processor and process until finely chopped.
This mix is wonderful as a spread for sandwiches.
For the dough
In a WonderMix mixer place the following ingredients:
1 cup sour dough starter
2 cups hot water
¼ cup sugar
¼ cup olive oil
1 cup olive stuff
1 tablespoon salt
2 cups cooked grains
4 to 6 cups white bread flour
¼ cup instant yeast
Place all the ingredients in the mixer bowl using only half of the flour. Place yeast on top of the flour and turn on mixer. Knead the dough adding more flour until dough pulls away from the sides of the bowl. Knead for 6 minutes. Remove from bowl and place in a large oiled bowl and let rise until double.
Remove from bowl and divide the dough into 3 to 4 equal pieces. Roll the dough out into a circle about ½ inch thick. Let rise and than coat with olive oil, rosemary, and Kosher salt. Place on a hot pizza stone in a 500 degree oven and bake until golden brown, about 6 minutes. Remove from oven and enjoy.
