This was the most popular salad in my Cafe. I called it the Oprah salad. It is the salad I want to feed her on National Television.
Mango Chicken Grain Salad (Pantry Members)

Ingredients
- 5 round loaves of whole wheat bread
- 1 ½ cups melted butter
- 2 ¼ cups white sugar
- 6 teaspoons cinnamon
- 1-cup rye berries
- 2 cups pearled barley
- 6 cups water
- 1 teaspoon Celtic sea salt
- 6 fresh mangoes, diced
- ½ cup golden raisins
- 1 large cucumber, diced
- 2/3 cup chopped pecans
Instructions
- Cut bread into chunks. In a large bowl drizzle melted butter over bread and toss in cinnamon/sugar mixture. Bake in a 325-degree oven until crisp.
- Cook Grain like you would cook brown rice. After cooking, chill and add remaining ingredients with dressing. Top with mangoes, cucumber, raisins, and pecans.

- Dressing:
- ½ cups extra virgin olive oil
- ½ cup flax oil
- cup white vinegar
- mango pureed
- tablespoons honey
- teaspoons Celtic sea salt
- Fresh parsley, chopped
- Combine chilled grains, fruits and veggies, and toss with dressing.

- To Serve, Toss:
- ½ cups croutons
- ¼ cup extra dressing
- cups grain mixture
- Mound on top of mixed greens and topped with sliced pistachio chicken breast.
