This was the most popular salad in my Cafe.  I called it the Oprah salad.  It is the salad I want to feed her on National Television.

Mango Chicken Grain Salad (Pantry Members)

Ingredients
  • 5 round loaves of whole wheat bread
  • 1 ½ cups melted butter
  • 2 ¼ cups white sugar
  • 6 teaspoons cinnamon
  • 1-cup rye berries
  • 2 cups pearled barley
  • 6 cups water
  • 1 teaspoon Celtic sea salt
  • 6 fresh mangoes, diced
  • ½ cup golden raisins
  • 1 large cucumber, diced
  • 2/3 cup chopped pecans
Instructions
  1. Cut bread into chunks. In a large bowl drizzle melted butter over bread and toss in cinnamon/sugar mixture. Bake in a 325-degree oven until crisp.
  2. Cook Grain like you would cook brown rice. After cooking, chill and add remaining ingredients with dressing. Top with mangoes, cucumber, raisins, and pecans.
  3. Dressing:
  4. ½ cups extra virgin olive oil
  5. ½ cup flax oil
  6. cup white vinegar
  7. mango pureed
  8. tablespoons honey
  9. teaspoons Celtic sea salt
  10. Fresh parsley, chopped
  11. Combine chilled grains, fruits and veggies, and toss with dressing.
  12. To Serve, Toss:
  13. ½ cups croutons
  14. ¼ cup extra dressing
  15. cups grain mixture
  16. Mound on top of mixed greens and topped with sliced pistachio chicken breast.
