Kamut Fruit Bread Pudding (Pantry Members)

Ingredients
- 1 cup cracked Kamut ®
- 12 cups bread cubes
- 3 eggs
- 1 cube melted butter
- 2 cups milk or half and half
- 2 teaspoons vanilla
- 2 cups fruit, chopped, your choice, fresh or frozen
- 1 ½ cup yellow D sugar

- Lemon Sauce:
- 4 slices of pickled lemon
- 1 cup sugar
- 2 cups water
- Ultra gel
Instructions
- Mix all ingredients in large bowl. Place in sprayed ovenproof pan that will fit into your pressure cooker. Cover with foil and place in trivet covered with water. Pressure on high for 20 minutes. Let pressure come down by itself and open and serve, topping with lemon sauce or flax oil.

- Lemon Sauce:
- Place sugar and water in Vita mix. Mix until sugar is dissolved. Add lemon and puree. Add enough Ultra gel to create sauce to desired consistency.
