Colorado River beans are my favorite for this salad.
Fresh Herb Bean Salad (Pantry Members)

Ingredients
- 3 cups uncooked beans, cooked, rinsed, and chilled
- 2 tomatoes
- 1 onion
- 2 stalks of celery
- 1 large cucumber
- 1 cup olive oil
- ½ cup balsamic vinegar
- Fresh herbs, basil, parsley, rosemary, etc.
- Salt and pepper
Instructions
- Place cooked beans in large bowl. Chopped tomatoes, onions, celery, and cucumber. Add oil and vinegar. Chop the herbs and toss with everything. Salt and pepper to taste.
