Colorado River beans are my favorite for this salad.

Fresh Herb Bean Salad (Pantry Members)

Ingredients
  • 3 cups uncooked beans, cooked, rinsed, and chilled
  • 2 tomatoes
  • 1 onion
  • 2 stalks of celery
  • 1 large cucumber
  • 1 cup olive oil
  • ½ cup balsamic vinegar
  • Fresh herbs, basil, parsley, rosemary, etc.
  • Salt and pepper
Instructions
  1. Place cooked beans in large bowl. Chopped tomatoes, onions, celery, and cucumber. Add oil and vinegar. Chop the herbs and toss with everything. Salt and pepper to taste.
