Barley and apples seem to be made for each other. Add the avocado and mint dressing and you have a very tasty salad.
Barley, Apple, Avocado Salad (Pantry Members)

- For the salad:
- 2 large apples, chopped in ½ inch squares
- 3 large avocados, peeled and cut in ½ inch squares
- 1 small red onion, chopped
- Cheese, farmer style, crumbled
- 2 cups cooked and chilled pearled barley
- Slivered almonds
- Romaine lettuce, chopped

- Mint Lemon Dressing:
- ½ cup olive oil
- ¼ cup lemonade flax oil
- ¼ cup Xagave
- ¼ cup chopped fresh mint
- 1 teaspoon salt
- ½ teaspoon pepper
- Mix well and serve with salad.
Instructions
- Place apples, avocados, onion, cheese, barley, and almond in large bowl, toss with dressing and place over bed of lettuce to serve. Can be topped with grilled chicken breast.
