I adore pancakes and waffles.  This recipe with just a small change does both.  Topped with fresh maple Xagave syrup, they are amazing.

 

Banana Nut Whole Grain Waffles/Pancakes

Ingredients
  • 3 fresh eggs
  • 2 tablespoons oil
  • 2 tablespoons sugar
  • 1 teaspoon sea salt
  • 1 large banana
  • 1 teaspoon vanilla
  • 2 cups butter milk for waffles
  • 2 1/2 cups butter milk for pancakes (Pancake batter should be a little bit more runny)
  • 1/2 cup choppped nuts, walnuts or pecans
  • 2 cups Chef Brad’s WonderFlour™
  • 1 large tablespoon Rumfords Baking Powder
Instructions
  1. In large bowl mash banana well.
  2. Add eggs, vanilla, oil, salt, buttermilk, and beat well.
  3. Add WonderFlour™ (learn about WonderFlour™ at www.chefbrad.com)
  4. Whisk well and add nuts and Rumfords. Whisk well again. Remove whisk and do not stir again. Gently laddle onto hot griddle or waffle iron.
  5. To make Xagave syrup add teaspoon of maple extract to 2 cups of Xagave. I just add the extract to a small bottle of Xagave. Xagave can be purchased at Preparing wisley or you can go to www.Xagave.com and order on line. Use my name when ordering and recieve a discount.
