Anadama Bread

Ingredients
  • 1/2 cup corn meal, (popcorn fresh ground in the WonderMill works great)
  • 3 tablespoons shorting or oil
  • 1/4 cup molasses
  • 2 teaspoons salt
  • 1 cup hot water
  • 1 egg
  • 2 tablespoons Saf instant yeast
  • 2 to 4 cups Natural White Flour
Instructions
  1. Place all ingredients in mixer bowl placing only half the flour on top with the yeast on top of the flour. Turn on mixer and add enough remaining flour until dough cleans the sides of the bowl. Knead for 6 minutes. Remove from mixer and divide into two pieces. Form large balls and place on cornmeal covered parchment paper and let rise until double. Place in hot 400-degree oven for 5 minutes dropping temperature to 325 until bread is done. About 25 minutes. Bread is done when internal temperature reaches 180 degrees.
