Black eyed peas are a staple in the South, they are wonderfully satisfying and are great served with brown rice.

Southern Black Eyed Peas Soup

Ingredients
  • 1 onion, diced
  • 1 slice bacon or pancetta, diced
  • 2 ½ cups black eyed peas, dried
  • ½ cup millet
  • 4 cups stock
  • 4 cups water
  • ½ teaspoon salt
  • ¼ Tablespoon pepper
  • 28 oz diced tomatoes
  • 1 teaspoon garlic powder
  • Splash balsamic vinegar
  • Dash of Tabasco (optional)
Instructions
  1. In a pressure cooker brown the bacon or pancetta with the onion. Add in everything else and pressure on high for 20 minutes.
