Red Quinoa Corn Side Dish

Ingredients
  • 2 cups cooked Red Quinoa
  • 6 cups cooked penne pasta
  • 2 cups corn
  • 2 cloves garlic
  • 1/2 chopped onion
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 1/3 to 1/2 cup Haco veal stock
  • 4 to 6 cups water
  • Chopped parsley
  • Salt and pepper to taste
Instructions
  1. Saute onion and garlic in butter and oil. Add quinoa and corn and continue to saute until flavors have combined. Add water and veal stock. Whisk to thicken and add pasta and parsley. Serve warm with breaded pork.
