Pistachio Pesto (Pantry Members)

Ingredients
- 2 cups lightly packe fresh basil
- 1 cup lightly toasted pistachios
- juice of one lemon
- 3 garlic cloves
- 1/2 cup Parmesan cheese
- 1 cup olive oil
- salt and pepper to taste
Instructions
- Toast pistachios in a skillet, lightly. Place basil in a blender with lemon juice, pistachios, garlic, and cheese. Chop or blend well. Add oil and puree well. Salt and pepper.
- Can be used for pasta, a spread for breads, or as a sauce for pizza.
