Pistachio Breaded Chicken Breast (Pantry Members)

Ingredients
  • 1 cup pistachios
  • 1 cup pumpkin seeds
  • 2 tablespoons dried rosemary
  • 2 teaspoons salt
  • 3 sprigs of parsley
Instructions
  1. Place all ingredients in food processor and mix until almost bread crumb consistency. Set aside
  2. In separate bowl whisk three eggs.
  3. In another bowl place 1 cup flour.
  4. Place boneless breast of chicken in flour, then eggs, then nut mixture. Place on a parchment paper and bake for 12 to 15 minutes in a 350 degree oven.
