Holiday Mandarin Orange Grain Salad (Pantry Members)

Ingredients
  • 8 cups cooked grains, chilled, farro, spelt, soft white wheat, or kamut
  • 4 cups mandarin oranges
  • 2 cups dried cranberries
  • 1 cup toasted pumpkin seeds
  • 2 cups pineapple tidbits
  • 2 large cucumbers, chopped
  • 8 cups romaine lettuce, chopped
  • 1 large red onion, chopped
  • Dressing:
  • 1 cup olive oil
  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1 teaspoon salt
  • 1 cup chutney or apricot jam
  • dash of cinnamon
Instructions
  1. Toss all ingredients and prepare dressing and toss with dressing.
