Chinese Chicken Salad

Ingredients
  • 2 breasts of chicken, shredded
  • 2 cups cooked Colorado river beans
  • 3 cups cooked Sweet Brown rice
  • 3 small 12 oz. cans mandarin oranges, drained
  • ½ cup sunflower seeds
  • 1 large English Cucumber, chopped
  • ½ red bell pepper, diced
  • ½ yellow bell pepper, diced
  • ½ of a fresh pineapple OR 1 large 16 oz. can pineapple tidbits, drained
  • ½ cup dried cranberries
  • 2 large heads romaine lettuce, cleaned and chopped
  • Curried Dressing:
  • ½ cup olive oil
  • ½ cup flax oil
  • ¼ cup sesame oil
  • 1/3 cup rice vinegar
  • 2/3 cup Xagave
  • 2 teaspoons curry powder
Instructions
  1. Place all ingredients in large bowl and toss with dressing. Arrange on top of lettuce leaves separate if planning to store for later.
  2. Curried Dressing:
  3. Whisk all ingredients together and toss with salad. Garnish salad with chow mien noodles if desired.
