Chinese Chicken Salad

Ingredients
- 2 breasts of chicken, shredded
- 2 cups cooked Colorado river beans
- 3 cups cooked Sweet Brown rice
- 3 small 12 oz. cans mandarin oranges, drained
- ½ cup sunflower seeds
- 1 large English Cucumber, chopped
- ½ red bell pepper, diced
- ½ yellow bell pepper, diced
- ½ of a fresh pineapple OR 1 large 16 oz. can pineapple tidbits, drained
- ½ cup dried cranberries
- 2 large heads romaine lettuce, cleaned and chopped

- Curried Dressing:
- ½ cup olive oil
- ½ cup flax oil
- ¼ cup sesame oil
- 1/3 cup rice vinegar
- 2/3 cup Xagave
- 2 teaspoons curry powder
Instructions
- Place all ingredients in large bowl and toss with dressing. Arrange on top of lettuce leaves separate if planning to store for later.

- Curried Dressing:
- Whisk all ingredients together and toss with salad. Garnish salad with chow mien noodles if desired.
