This is great with meats, or poultry.

Fresh Fruit Compote

Ingredients
  • 3 firm pears, cored
  • 2 cups fresh cranberries
  • 1 cup fresh figs
  • 1 cup chopped dates
  • 1 cup raisins
  • ½ cup Xagave
  • ¼ cup White Balsamic Vinegar
  • About 1 cup of stock (turkey, ham or chicken drippings work great
  • ½ cup butter
  • ¼ cup olive oil
Instructions
  1. In a large sauce pan, place butter and oil and melt. Add the pears and caramelize adding the Xagave.
  2. Add the remaining fruit and cook until the cranberries burst.
  3. Add the vinegar and stock.
  4. Simmer until it thickens and then remove from the heat.
  5. You can serve it over sliced meat like lamb, turkey, chicken or ham.
