Brown Rice and Chicken

Ingredients
  • 2 chicken breasts, diced, uncooked
  • 1 T. Extra Virgin Olive Oil
  • 2 T. smoked paprika
  • 2 T. Tuscan sunset
  • 4 cups Vegetable Stock (can use chicken stock)
  • 28 oz. can crushed fire roasted tomatoes
  • 3 cups long grain brown rice, uncooked
  • 1 cup corn, frozen
Instructions
  1. Turn on an electric pressure cooker to high heat to begin heating up.
  2. Put in the chicken with the oil and start browning.
  3. Add in the seasonings and cook for a few minutes.
  4. Add in the rest of the ingredients and stir to combine.
  5. Place on the lid and lock in place.
  6. Make sure the valve in closed and cook for 20 minutes.
