Brown Rice and Chicken

Ingredients
- 2 chicken breasts, diced, uncooked
- 1 T. Extra Virgin Olive Oil
- 2 T. smoked paprika
- 2 T. Tuscan sunset
- 4 cups Vegetable Stock (can use chicken stock)
- 28 oz. can crushed fire roasted tomatoes
- 3 cups long grain brown rice, uncooked
- 1 cup corn, frozen
Instructions
- Turn on an electric pressure cooker to high heat to begin heating up.
- Put in the chicken with the oil and start browning.
- Add in the seasonings and cook for a few minutes.
- Add in the rest of the ingredients and stir to combine.
- Place on the lid and lock in place.
- Make sure the valve in closed and cook for 20 minutes.
