Goulash/South of the Border style

Ingredients
  • 1 lb. ground beef or ground pork
  • 1 chopped red bell pepper
  • 1 chopped onion
  • 3 minced garlic cloves
  • 1 can chopped green chiles, small can
  • 1 can crushed roasted tomatoes, 28 oz. size
  • 3 cups water
  • 2 cup cooked kidney beans
  • 1 cup red quinoa
  • 1 cup white basmati rice
  • 2 tablespoon chile powder
  • 1/2 bunch fresh cilantro, chopped
  • 1/2 bunch fresh cilantro, chopped for garish after cooking
  • Salt and pepper
Instructions
  1. Brown meat with rice and quinoa.
  2. Add all remaining ingredients except cilantro garnish.
  3. Place lid on pressure cooker and cook on high for 6 minutes.
  4. Let pressure down naturally and open.
  5. stir in fresh cilantro and enjoy.
