Goulash/South of the Border style

- 1 lb. ground beef or ground pork
- 1 chopped red bell pepper
- 1 chopped onion
- 3 minced garlic cloves
- 1 can chopped green chiles, small can
- 1 can crushed roasted tomatoes, 28 oz. size
- 3 cups water
- 2 cup cooked kidney beans
- 1 cup red quinoa
- 1 cup white basmati rice
- 2 tablespoon chile powder
- 1/2 bunch fresh cilantro, chopped
- 1/2 bunch fresh cilantro, chopped for garish after cooking
- Salt and pepper
Instructions
- Brown meat with rice and quinoa.
- Add all remaining ingredients except cilantro garnish.
- Place lid on pressure cooker and cook on high for 6 minutes.
- Let pressure down naturally and open.
- stir in fresh cilantro and enjoy.
