Apple Quinoa Side Dish

Ingredients
  • ¼ cup butter
  • ½ onion, chopped
  • 1 bell pepper, yellow, chopped
  • 1 large apple, chopped
  • 2 cups red quinoa
  • 3 cups water
Instructions
  1. In pan, sauté butter, onion, bell pepper, and apple.
  2. After vegetables and apple are tender add red quinoa and water. Bring to boil and lower heat, placing lid on top and cooking just like white rice. Salt and pepper to taste.
