This is a wonderful bun that is tender and light.  I love it for all kinds of sandwiches, from pulled pork to tuna.

 

Teff Burger Buns

Serves: 32 buns
Ingredients
  • 3 cup 110 degree milk
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/2 cup water
  • 2 teaspoons salt
  • 2 tablespoons yeast
  • 1 cup whole grain teff
  • Unbrominated white flour, about 9 cups
Instructions
  1. Heat up milk to 110 degrees. Place milk with all ingredients only adding half the flour with the yeast on top in your WonderMix Mixer. Turn on mixer and add more flour until dough pulls away from the sides of the bowl. Knead for 6 minutes. Remove dough on a oiled surface. Form large ball. Divide into four equal parts. Divide each section into 8 equal parts. Yield 32 buns. Roll each segment into a ball and flatted on a floured surface. Place on a parchment lined baking sheet. Let rise to double and bake in a 350 degree oven for about 15 to 20 minutes. Remove and brush with butter. Cool and store in bread bag.
