Elegant Chocolate Truffles (Pantry Members)

Ingredients
- 1 ½ pounds chocolate, about 4 ½ cups melted
- 1 cup heavy whipping cream
- 2 teaspoons vanilla
Instructions
- Melt chocolate. In 1 quart sauce pan scald cream. Remove from heat and let cool for 5 minutes. Stir in vanilla, Beat melted chocolate with an electric mixer until starts to cool. Stop mixer and pour cream over chocolate all at once. Continue to mix until mixture is smooth and well blended.. Pour into bowl and chill until firm. Shape into balls with spoon or by hand. If mixture becomes to soft dust hands lightly with cornstarch. Arrange truffles on waxed paper-lined baking sheet. You can dip in chocolate, roll in powdered sugar, nuts or coconut. You can drizzle melted chocolate over truffles to decorate.
