Kalamta Olive Flat Bread

Ingredients
- 1 cup sourdough starter (buy at www.chefbrad.com)
- ¼ cup sugar
- 2 cups warm water
- 3 cups whole grain flour
- 3 tablespoons yeast
- 2 tablespoons salt
- 1/3 cup olive oil
- ½ cup to 1 cup chopped Kalamta olives
- 1 cup feta cheese
- 3 to 5 cups of flour
Instructions
- Add the Sourdough Starter, sugar, warm water, flour, and yeast ingredients to a bowl and mix together.
- After 20 minutes add the remaining ingredients to the bowl and knead for 6 minutes.
- After kneading place dough in an oiled bowl and let rise.
- After dough has risen, coat bottom of a jelly roll pan with oil.
- Spread and push down dough all around the bottom of the pan.
- Using fingers, press indents into the dough all over.
- Fill dents with olive oil, sprinkle with rosemary and kosher salt.
- Bake in a hot 400 degree oven for 14-15 minutes until done.
