I found this recipe on a Trip to South America and added the quinoa, I love the color and the flavor is amazing.

Christmas Chilean Beet Salad

Ingredients
  • 8 to 10 beets, cooked and cut into ½ inch pieces
  • 8 eggs, hard boiled and chopped
  • ½ onion, chopped
  • 1 cup cooked red quinoa
  • Fresh squeezed lemon juice from two lemons
  • Mayonnaise, about a cup or so, enough to make it nice
Instructions
  1. In a bowl stir together the lemon juice and mayonnaise till combined.
  2. Add in the rest of the ingredients and fold together until combined.
  3. Season with salt and pepper.
