Spinach Pie

Ingredients
  • In your mixer place the following ingredients and let sponge for about 20 minutes:
  • 2 cups sour dough starter
  • ½ cup sugar
  • 1 cup potato flakes
  • 1 cup oatmeal and ½ cup cooked Quinoa
  • 4 cups hot water
  • ¼ cup yeast
  • After 20 minutes add the following ingredients and mix for six minutes.
  • ½ cup olive oil
  • 4 whole eggs
  • 2 tablespoons kosher salt
  • 2 tablespoons Chef Brad’s Italian seasoning
  • 4 t0 8 cups of natural white flour (add flour until dough cleans the side of the bowl)
  • After six minutes place dough in a oiled bowl and let rise to double.
  • For the pies:
  • 8 Italian sausages
  • 6 cups mozzarella cheese
  • 2 cups feta cheese
  • 2 cups mushrooms
  • Cooked and drained spinach, about 4 cups
  • Olive oil
Instructions
  1. Preheat oven to 400 degrees.
  2. Divide the dough into 4 pieces. 2 being a bit larger than the other 2.
  3. Roll the dough out to about 14 inches using the large piece of dough.
  4. Place in oiled pan. Spread half the ingredients on the dough.
  5. Roll out a smaller piece of dough to about 14 inches.
  6. Place on top of first piece and ingredients.
  7. Repeat process with remaining dough and ingredients.
  8. After oven is preheated drizzle pie with olive oil and sprinkle with kosher salt.
  9. Bake in oven dropping temp to 335 degrees for 25 to 30 minutes.
  10. Remove from oven and gently remove from pan. Slice and serve with dipping sauce
Dipping Sauce

  • 1 can tomato sauce
  • 2 tablespoons Chef Brad’s Italian seasoning
  • 3 tablespoons Olive Oil
Instructions
  1. Mix all ingredients well.
