Ground Turkey Quinoa Stew

Ingredients
  • 2 lbs.Fingerling potatoes or red potatoes, cut in 1/2 inch pieces
  • 2 cups baby carrots
  • 1 large onion chopped
  • 2 lbs. ground turkey
  • 1/2 lb. uncooked pasta, spirals
  • 2 large 24 oz cans of crushed tomatoes
  • 1 tablespoon crushed garlic
  • 1/2 cup uncooked quinoa
  • 4 cups of water
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • Freah rosemary and thyme, chopped
  • Salt and Pepper
Instructions
  1. Place olive oil in pressure cooker and add turkey.
  2. Saute adding garlic and onion.
  3. Cook until turkey is browned.
  4. Add all remaining ingredients and place lid on pressure cooker.
  5. Cook for 6 minutes on high.
