Ground Turkey Quinoa Stew

Ingredients
- 2 lbs.Fingerling potatoes or red potatoes, cut in 1/2 inch pieces
- 2 cups baby carrots
- 1 large onion chopped
- 2 lbs. ground turkey
- 1/2 lb. uncooked pasta, spirals
- 2 large 24 oz cans of crushed tomatoes
- 1 tablespoon crushed garlic
- 1/2 cup uncooked quinoa
- 4 cups of water
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- Freah rosemary and thyme, chopped
- Salt and Pepper
Instructions
- Place olive oil in pressure cooker and add turkey.
- Saute adding garlic and onion.
- Cook until turkey is browned.
- Add all remaining ingredients and place lid on pressure cooker.
- Cook for 6 minutes on high.
