Enrichment Salad

Ingredients
  • Salad:
  • 3 cups cooked rio zappe beans, chilled
  • 3 cups cooked Farro, chilled
  • 1 large cucumber
  • 1 large red onion
  • 2 cups cooked Broccoli
  • 1 large head of romaine lettuce
  • cup chopped tomatoes
  • Dressing:
  • ½ cup olive oil
  • ½ cup flax oil
  • 2/3 cup red wine vinegar
  • 2 cloves of garlic
  • ½ cup fresh herbs
  • salt and pepper
Instructions
  1. Place all Dressing ingredients in blender and puree.
  2. Toss all Salad ingredients in large bowl and toss with dressing.
