- Salad:
- 3 cups cooked rio zappe beans, chilled
- 3 cups cooked Farro, chilled
- 1 large cucumber
- 1 large red onion
- 2 cups cooked Broccoli
- 1 large head of romaine lettuce
- cup chopped tomatoes
- –
- Dressing:
- ½ cup olive oil
- ½ cup flax oil
- 2/3 cup red wine vinegar
- 2 cloves of garlic
- ½ cup fresh herbs
- salt and pepper
Instructions
- Place all Dressing ingredients in blender and puree.
- Toss all Salad ingredients in large bowl and toss with dressing.
